The word “freddo” in Italian means cold, and European coffeehouses have long served a variety of cold beverages using cold foamed milk vs. hot. This year’s National Restaurant Association Show was filled with equipment pieces that allow operators to make and offer cold foam for coffee drinks.

The Starbucks Nitro Freddo is made with nitro cold brew infused with dark caramel, topped with a dark-caramel-infused cold foam and finished with a strike of finely ground coffee across the top. The Nitro Freddo was the first time Starbucks used cold foam in a drink at its traditional stores, combining this new trend with the ongoing trend of cold-brew nitro.
