Carve and Guard

New Alto-Shaam product offers upgrades
MENOMONEE FALLS, Wis. -- Alto-Shaam has developed a new carvery, the CS-200, that meets today's upgraded standards for breath guards and switches.

Alto-Shaam carveries are known for providing soft, gentle Halo Heat directly to the carving surface for even, controllable heating. The shelf surface is recessed to catch drippings. The fixed, double-lamp assembly provides additional heat to the product surface for greater ambient surface temperature control, and it is designed to fit on top of an Alto-Shaam Cook & Hold oven or Heated Holding Cabinet.

The CS-200 boasts [image-nocss] an updated breath guard design that allows the user to easily remove the glass guards for easy cleaning. No screws are used to hold the guards in place. Simply slide the guards out of the tracks and clean. These changes comply with new NSF guidelines.

The switches on the CS-200 also have been upgraded to rocker switches, providing a more flush profile.

Founded in 1956, Alto-Shaam, Menomonee Falls, Wis., is the inventor of the original Cook and Hold oven that revolutionized low-heat cooking and the commercial cooking industry. Today, Alto-Shaam features a full line of Cook and Hold ovens, convection ovens, combi ovens, chillers, warming cabinets and drawers, heated buffet and display cabinets, merchandisers, fryers, and rotisseries.
