
Indulgence, information and innovation are three trends in today’s top-rated foodservice items, according to CSP sister research arm Technomic’s Foodservice State of the Industry – Midyear Update.
When it comes to indulgence, Technomic notes offerings with loaded carbs, such as Krystal Company’s Ranch Blasted Junkyard Fries; Surf and Turf from Cooper’s Hawk Winery and Restaurant; and dessert inspirations, such as Iced Bananas Foster from PJ's Coffee of New Orleans.
Regarding information, retailers should include health listings and substitutions; animal breed callouts; and prep, location inspiration and brand mentions.
An example of a health listing is pointing out an item that aids gut health, such as the Greek Watermelon Smoothie from Smoothie King. Animal breed callouts include a Wagyu Beef and Prosciutto Burger with Snake River Farms American Wagyu ground beef from the Thirsty Lion Scratch Kitchen. An example of a brand mention is the Reese’s Peanut Butter Double Stuffed Cookie from Great American Cookies.
Chicago-based Technomic also highlights several innovation trends.
First is texture or flavor opposition, such as the Crispy ’n Gooey Mozz and Herb Bites from Jamba and the Hot Honey Glazed Chicken and Bacon Skillet at Applebee’s.
Next are innovative infusions, such as the Benedict Smash Burger with chile crisp hollandaise from Silver Diner.
Finally, there are bites and poppers, which also include the Crispy ’n Gooey Mozz and Herb Bites from Jamba.
