Convenience stores looking to add a little boost to their foodservice programs might look at what IHOP is doing with its Pancake Tacos.

The limited-time offer is a handheld version of a pancake in four varieties, two savory and two sweet, “providing choices that span the dayparts,” reported CSP sister Restaurant Business.

“I saw this as an opportunity to create more depth and taco iterations using our original pancake,” said Arthur Carl II, vice president of culinary at Glendale, California-based IHOP, adding he reduced the pancake to street taco size, Restaurant Business reported. “The Breakfast Pancake Taco really speaks to our guests, while the chicken taco is a little more adventurous and designed to be more of a lunch or dinner entree. The goal was to leverage our breakfast equity to expand into other dayparts.”
