“[Food people] don’t even know what margin means,” says Cushman, Ph.D., and executive vice president of food services for the Canastota, N.Y.-based chain. “To be honest with you, we still view it like most retailers who look at margin. Foodservice doesn’t work like that. But what we’ve  done over the years—really, the food people—we just kind of adapted.”
