Interest in ethnic fare has been increasing for the past decade at various foodservice establishments, and operators are responding with a plethora of new global options in hopes of appealing to adventurous diners. Some are even offering ethnic items for the first time: In late October, Maverik launched the Kung Fu Chicken Wrap, calling the debut its first foray into Asian fare.
Also trending at retail outlets, according to Technomic’s 2015 Retailer Meal Solutions Consumer Trend Report, are Cuban inspirations; Mexican and Southwestern ingredients such as jalapeño and pepper jack cheese; spicy sauces, condiments and peppers; and bold breakfast sandwiches. As consumers become more intelligent about food, including ethnic variations, retailers should strive for authenticity.
