UTICA, N.Y. -- Cliff’s Local Market has appointed a new director of foodservice. Derek Thurston, who has been with the Utica, N.Y.-based retailer for three years as the foodservice supervisor, has stepped into the role.

Prior to Cliff’s Local Market, Thurston worked as a business consultant for Subway. In this role, Thurston worked with Clifford Fuel Co. to optimize four Subway franchise locations. His guidance helped push the stores to rank among the top performers in the central New York area, according to the company.

As foodservice supervisor, Thurston has helped the category increase sales and margin. He helped transition the chain from a cost-based inventory system to one formulated on recipes. His achievements include developing a foodservice management bonus program and increased menu management to boost profits.

Owned and operated by Clifford Fuel Co. Inc., Cliff’s Market is a chain of 19 convenience stores in the central New York area.
