2024 Is So Last Year: Here’s Technomic’s 2025 Menu Predictions

Plant-based varieties continue to grow, while cold foam leads the pack in the coffee world

The year 2024 is upon is, so let’s celebrate with the recently released 2025—yes, 2025—Menu Predictions from CSP sister research arm Technomic.

Leading off Technomic Ignite Menu predictions is the continuing growth of plant-based items over the next two years. This includes:

  • Plant-based fish, up 131%
  • Plant-based pork, up 126%
  • Plant-based beef, up 123%
  • Plant-based cheese, up 122%
  • Plant-based egg, up 120%

Elsewhere, Technomic predicts the growth of peppers and ingredients made from peppers, including:

  • Habanero marinade, up 200%
  • Toreado, up 136%
  • Fresno chile pepper, up 132%
  • Morita, up 130%
  • Aji amarillo pepper, up 126%

The items have been prominent on the fastest-growing forecast for the past two quarters, indicating a sustained potential for growth, Technomic said.

Of particular interest to dispensed-beverage category managers is a third prediction regarding coffee preparations and ingredients.

The report predicts:

  • Cold foam will grow 295%, followed by:
  • Mocha sauce, up 200%
  • Cortado, up 128%
  • Lavender syrup, up 118%
  • Cold brew, up 115%

Finally, here’s the Top 10 entries in Technomic’s predicted two-year growth:

  • Ceviche, up 929%
  • Cold foam, up 295%
  • Alcohol free, up 247%
  • Aged sherry dressing, up 200%
  • Cherrywood bacon, up 200%
  • Habanero marinade, up 200%
  • Hoja santa, up 200%
  • Mocha sauce, up 200%
  • Birria, up 172%
  • Tie: Hard seltzer, up 150%
  • Alabama style, up 150%

The 2025 Menu Predictions report surveyed about 7,000 operators in predicting two-year operator penetration growth.
