Hotel restaurants roll out eye-catching offerings, including a Tokyo-themed meal

Aiming to stand out with its offerings in an upscale Chicago hotel’s restaurant that it’s operating, Lettuce Entertain You Enterprises rolled out a menu sure to grab attention.

Miru, in the St. Regis, celebrates the flavors of Japan, reports CSP sister publication Foodservice Director.

The team worked with chef/partner Hisanobu Osaka and the culinary team to create the Tokyo Breakfast, which includes grilled umami King salmon, a soft-set egg with salmon roe, dashi tamago, ginger rice and miso soup. It costs $32.

Those not in the mood for a Japanese-style breakfast can choose other offerings, such as Buttermilk Pancakes with Yuzu Ricotta and Blueberries, Foodservice Director reported.
