Steal This Idea: Capture Customers With Signature Cookie

An Ohio medical center did just that—and now sells 1,000 to 1,200 monthly

Looking for an unusual product that could rev up the afternoon daypart, specifically targeting those hankering for a speedy snack, a medical center in Lima, Ohio, landed on a gourmet cookie.

The concept, which the foodservice team at St. Rita’s Medical Center dubbed Simple Dimple, began in May 2022 upon ordering two new TurboChef pizza ovens, reported CSP sister publication Foodservice Director.

“I’m like, OK, we can do this. So, let’s make our version of a nice, made-to-order gourmet cookie, you know?” Felicia Crawford, culinary director, told Foodservice Director. “Who doesn’t like a warm chocolate chip cookie to brighten their day?”

“Simple Dimple currently has about 19 cookie options offered on a rotating menu,” Foodservice Director reported. “Its staple chocolate chip cookie is of the brown butter variety with pink Himalayan salt. The cookies are sold for $3 apiece and or in packs of one, two, three, six and 12.”

Simple Dimple sells an average of 1,000 to 1,200 cookies monthly.
