CHICAGO  Retailers looking for a new foodservice item should consider transforming an existing item into something else.

Boston Market, for example, in July launched Rotisserie Chicken Nuggets, disrobing the breaded and fried chicken nugget and making it healthier, CSP sister Restaurant Business reported. The culinary team worked out a technique to treat bite-size portions of white meat to the same seasoning and roasting methods as the chain’s whole birds.

“We didn’t have a handheld item, and families were looking for that from us,” said Jay Pandya, Boston Market’s CEO and “chief rotisserie officer.”
