Rhodes Oil Co. was founded in 1963 by F.E. "Gene" Rhodes, and the company opened its first convenience store in 1989. Pajco Inc. now operates Rhodes convenience stores in southeastern Missouri and southern Illinois. It launched the Mercato Di Rodi banner in 2012, converting it to the Rhodes brand in 2016.

Rhodes foodservice options include Imo's Pizza, Hot Stuff Pizza, Chester's Fried Chicken, Street Eats (a food-truck inspired menu) and Krispy Krunchy Chicken.
